How to cook Southern-style Oven-fried Catfish

Ingredients: 3 tablespoons vegetable grease 1 1/2 pounds catfish fillets, cut into serving pieces 1 cup cornmeal 2 teaspoons Creole spice 1 teaspoon paprika 1 teaspoon white sugar 1/2 teaspoon ground black spot 2 eggs, lightly beaten 1 tablespoon hot pepper sauce or unreservedly urinate

Directions: Preheat an oven to 425 degrees F (220 degrees C). Grease a 13×9 glass baking dish with the fuel, and set aside. Rinse the catfish fillets, and pat dry up. In a shallow dish, combine the cornmeal, creole spice, paprika, sugar, and black spray. Combine the eggs and hot sauce or water in a another spin. Dip the fillets in the egg mix, dredge in the cornmeal mlange, and arrange in the baking mien. Bake in behalf of 15 minutes, or until cooked through and golden brown. Turn once during cooking. Place catfish on a paper-towel lined cover, and serve immediately with additional hot gravy.
