How to cook Snapper Veracruz

Ingredients: 4 (6 ounce) red snapper or halibut fillets 1 tablespoon fresh lime or lemon essence 1 (8 ounce) can stewed tomatoes, undrained 1/4 cup sliced pimento-stuffed green olives 2 tablespoons hot salsa 1 teaspoon ground coriander 1/2 teaspoon dried oregano 1 1/2 cups Sargento Fancy Shredded 4 Cheese Mexican Cheese Lime wedges (free)

Directions: Place fish in single layer in shallow baking dish. Sprinkle lime juice over fish. Combine tomatoes, olives, salsa, coriander and oregano in small pan; spoon over fish. Bake in preheated 350 degrees F oven 20 minutes or until fish is dull. Sprinkle cheese evenly over fish; let champion 3 minutes or until cheese is melted. Serve with lime wedges, if belonging.
